1/4 cup ground flax
1 Tbsp.baking powder
2 Tbsp. cassia cinnamon
1 Tsp. coconut oil
1 packet stevia (or sugar substitute that works best for you)
Place all ingredients in a mug and stir together, scrambling the egg. Put the mug in microwave for 1 minute. Eggs will rise into a "muffin". I was surprised at how easy and tasty this recipe is. Credit to Jorge Cruise author of the Belly Fat Cure for this recipe.
